The Jump Up Daiquiri

Which hot pepper jelly you use may depend on your tolerance for spiciness, but our preference was the even heat of the President’s Choice brand. You can also try a variety of Jamaican Scotch bonnet hot pepper jellies, which are found in grocery stores and specialty markets, but make sure you test the one you choose before deciding how much to add to your cocktail!
In a cocktail shaker filled with ice, add 1 oz rum (añejo blanco, white or amber), ½ oz triple sec, ½ oz lime juice, 1 oz pineapple juice and 2 to 3 tsp hot pepper jelly (to taste). Shake until frothy and strain into a cocktail glass. Garnish with a sprig of cilantro.
