The Easiest, Sexiest Salad in the World

This salad is one of Jamie's favourites. “Sometimes it's nice to put together five things that are good quality and have it work really well, he says.” “It's a whole lot of different flavours going on in your mouth.” If you can't find figs, try using cherries (about three per person), kiwi fruit or mango instead. Jamie uses one fig per person but you could increase the number, if desired.
Serves 8
8 green or black figs
8 slices of Parma ham or prosciutto
8 oz (250 g) ball buffalo mozzarella, sliced
¼ cup (50 mL) purple or green basil leaves, torn
Dressing
1/3 cup (75 mL) olive oil
3 tbsp (45 mL) lemon juice
1 tbsp (15 mL) honey
Salt and freshly ground pepper
1. Slice an X into each fig, cutting down only one-quarter of the way through (don't cut to the bottom). Squeeze the base of each fig to expose the inside.
2. Place a fig, a slice of ham, some slices of mozzarella and some torn basil leaves on a plate. Repeat for other 7 servings. Alternatively, scatter figs, ham, mozzarella and basil on a platter for guests to help themselves.
3. Mix together the olive oil, lemon juice and honey in a small bowl. Season to taste. Drizzle dressing over each plate.
