Spring Sangria with Macerated Fruit

Cucumber makes a surprise appearance in this refreshing fruity sangria. Replace the brandy with spiced rum or vodka for a different twist.

Makes 4 servings

3 cups (750 mL) red wine
1 lemon, sliced into rounds, seeds removed
1 medium orange, sliced into rounds, seeds removed
1 cup (250 mL) sliced strawberries
½ cup (125 mL) sliced cucumber
2 tbsp (25 mL) sugar
2 oz (60 mL) brandy
1 cup (250 mL) ginger ale

1. Combine wine in a large pitcher with lemon, orange, strawberries and cucumber. Stir in sugar and brandy. Cover and chill in refrigerator for 4 hours and up to 1 day.

2. Add ginger ale and ice just before serving.
