Start from a Martini mindset using 1½ oz very cold soju as your spirit and a dash of chilled sake or plum wine as your vermouth. The third element is the most evocative. A twist of tangerine zest, perhaps, with a few drops of its juice. Or a slice of white peach or apricot. Maybe even a dash of lychee liqueur.
