A delicious alternative to the Margarita.

Paloma is Spanish for “dove” but also slang for the fungal plague that attacked the blue agave crops of Jalisco in the late 1990s. Irony aside, it's a delicious, lightweight, fresh-tasting cocktail that showcases the flavour of tequila better than any Margarita. In Mexico, the favoured mixer is Squirt, a grapefruit flavoured pop. I find it works just as well with Fresca.

A quarter of a fresh lime
Kosher or sea salt
Ice
1 1/2 oz tequila
Grapefruit flavoured pop

1. Rub the lime around the rim of a tall glass. Invert the glass into a saucer of salt to salt the rim. Put two or three ice cubes into the glass. Add tequila. Squeeze lime quarter into the glass and throw it in. Top up with grapefruit pop.
