To a cocktail shaker filled with ice, add 2 tbsp mixed berries (fresh or frozen), ½ oz lemon juice and ½ oz simple syrup.* Shake well and strain into a Champagne flute. Top with sparkling wine and garnish with a skewer of berries.
*To make simple syrup, combine equal parts sugar and boiling water, then stir until sugar has dissolved. Store in fridge for up to 2 weeks.
Makes 1 drink
