Niagara Sunshine

Peaches are almost as abundant in the Niagara region as grapes, so it is only natural to combine the 2 ingredients in a cocktail that bursts with flavour. It’s like sunshine in a glass!
In a cocktail shaker filled with ice, add 1 oz amber rum, ½ oz icewine, ⅛ fresh lemon and 2 oz peach juice. Shake and strain into a Collins glass and top with a splash of soda. Garnish with a mint leaf in glass and peach slice.
