Hot Rum Toddy

It was on a winter holiday to sunny Jamaica that I found time to discover the delicious flavours of rum. The distilled spirit is made from the syrup, molasses and fermented juice of the sugar cane. White rums generally are not aged and are best used for mixing. Amber rums can get their colour from various aging periods in casks and on occasion form the addition of caramel - they work well in tall drinks and also in hot drinks.

1 1/2 oz Appleton Estate Extra
3 cloves
1 lemon slice
1 tsp dark sugar
Dash of cinnamon

  1. In a large mug, combine the above ingredients. Fill the mug with hot water and top with a sprinkle of nutmeg.
