Gin Simple Syrup

Gin derives its flavour from a unique combination of botanicals—herbs, fruits, flowers and roots—with the ever-present juniper balancing out the product. We know that gin drinkers usually have a favourite brand; some prefer lighter-tasting gins with more citrus and less juniper taste, or modern gins utilizing ingredients like cucumber and lemon grass; others a more classic London Dry style. With that in mind, we created a syrup that would complement many different gins, with a balance of heady rosemary, spicy ginger and lemon zest, with a sweet honey finish. No matter the preference of your gin lover, the characteristics of each gin will evolve with the syrup, and will work in everything from a classic Gin Collins to a Gimlet.

Makes approx. 8 cocktails using 1 oz of syrup

Peel half a lemon with a potato peeler. Add peel to a heatproof jar, along with 2 tsp (10 mL) chopped fresh ginger, 2 sprigs of rosemary, ½ cup (125 mL) honey and ½ cup (125 mL) boiling water. Stir to dissolve the honey and allow to cool. Put in a lidded jar and store in the fridge for 4 to 24 hours. Strain out liquid into a decorative bottle for gifting, discarding the solids.
