California Grog
Holiday 2001
Grog was the original term applied to the watered-down rations of rum given to sailors of the Royal Navy. A wise captain thought to add fresh lemon or lime to his crew's ration to prevent scurvy, inadvertently creating the foundation of modern grog.
1 oz amber rum
¼ tsp ground cinnamon
¼ tsp ground ginger
¼ tsp ground nutmeg
2 whole cloves
5 oz white wine
Thin slice of lemon peel
1. Add amber rum to a saucepan, along with ground cinnamon, ground ginger, ground nutmeg and whole cloves.
2. Heat and simmer for several minutes. Add white wine and a thin slice of lemon peel and stir until hot.
3. Strain into a chalice or goblet and serve.
