Bourbon BBQ Sauce

Combine 1 cup (250 mL) BBQ sauce with 2 tbsp (30 mL) bourbon and 2 tbsp (30 mL) espresso or strong coffee in a medium pot over medium-high. Bring to a boil then reduce heat and simmer for 10 minutes or until flavours have developed. Served with grilled double-cut pork chops.
Pork: Preheat BBQ to high. Brush two 12-oz (375‑g) double-cut pork chops with oil and season with salt and pepper. Grill, covered, for 5 minutes. Turn chops and baste with Bourbon BBQ Sauce. Cook for 5 more minutes then turn and baste again. Cook for 5 more minutes, or until juices run clear.
