Award-Worthy Collins

With its golden hue and sparkling finish, this is a pretty drink to get the party started. Feel free to cut back on the gin if desired.
Makes 1 drink
1 tbsp (15 mL) fresh lemon juice
½ tsp (2 mL) sugar
Chopped ice
2 oz gin
Sparkling wine
Lemon wedge
Maraschino cherry
1 Shake together lemon juice, sugar and ice. Stir in gin, strain and pour into a tall glass over more chopped ice. Top with sparkling wine and garnish with lemon and cherry.
