Aperol Grapefruit Tequila Fizz

If you aren’t familiar with Aperol, it’s like the little sister of Campari. Less bitter, and lower in alcohol, it blends beautifully with grapefruit juice, tequila and lemon in this pretty, pink-hued cocktail.
Makes 6 cocktails
1½ cups (375 mL) strained fresh pink grapefruit juice
¾ cup (175 mL) reposado tequila
¾ cup (175 mL) Aperol
1 lemon, cut into wedges (or more to taste)
¾ cup (175 mL) club soda
Lemon slices to garnish
1 Combine grapefruit juice, tequila and Aperolin a pitcher. For each drink, measure out ½ cup (125 mL) of mixture, squeeze in a wedge of lemon (you may need more or less lemon depending on the acidity of the grapefruit juice) and shake over ice. Strain into a glass, and top with 2 tbsp (30 mL) soda water. Garnish with a fresh slice of lemon.
