Chardonnay is the variety that has performed best under the extremely cold and windy conditions in Sarmiento, on the shores of Lake Musters in Patagonia. The chardonnay from that remote location, a cold steppe desert, has a very particular character where the flavors of the grapes that ripen under the intense sun contrast with the penetrating and sharp acidity of a cool climate that doesn't burn off that acidity. In this chardonnay, aged in foudres for 16 months, you can taste the succulent southern fruit, the herbs and the depth of the flavors that project outward thanks to their density, and most of all, the acidity that acts as a kind of transport that moves everything across the palate.
