Whereas most 'wooded' wines spend time in oak, part of the Riesling in this blend - which also contains barrel-fermented Chardonnay, skin-fermented Gewürz and a splash of Sauvignon Blanc - was fermented in acacia, which adds lovely exotic floral, vanilla and forest notes to a juicy core of apple, peach and citrus. A subtle mineral quality underpins it all nicely. Lightly chill and sip with Alsatian onion tarts. (Vintages panel, Sept. 2018)
