    Grown in clay-limestone soil where once stood a convent of the Ursuline order of nuns, this wine always offers an excellent insight into hallowed Burgundian terroir without an ungodly price tag. It was made in gravity-fed tanks using indigenous yeast and spent seven months on the lees before a quick turn in oak. Look for vibrant redcurrant, sour cherry and freshly cut roses, and sip with coq au vin.
