Cave Spring's estate vineyards are excellent for growing dry, zippy Riesling thanks to the consistent weather in this microclimate. Flavours of Persian lime and orange blossom mingle with aromas of wet stone and petrol due to ageing in a combination of stainless steel and neutral oak vessels. A Riesling of this calibre will drink favourably from 2026 into the late 2030s.
