This was matured for eight months under flor, which is the cap of yeast that covers Sherry as it ages in barrel. Flor restricts the interaction that the wine has with oxygen and imparts a distinct sherried character. This wine is made from Pedro Ximénez and has all the qualities of a great Sherry but will have you thinking of PX in a very different light. It's dry, with a dynamic acidity, a wonderful sherried complexity, and suggestions of olives and nuts followed by a profound salinity. A great option for tapas, shellfish or deep-fried calamari.
