Made from Chardonnay that was planted in Piemonte in the 1970s. The grapes are fermented spontaneously on the skins, which usually lasts several months. It stays on the lees until bottling, which is about six months after the harvest, in spring. Unfined, unfiltered, no added sulphates, and no temperature control. This is real, raw wine.
