A blend of 50% Xarel-lo, 25% Macabeo and 25% Parellada, this gorgeous sparkler spent 4 years on its lees in bottle before disgorgement. There is no dosage here, so this is the driest of the Aymar range of Cava. Gold with shades of green, it has wonderful bready, yeasty autolytic notes interplaying with fresh green apple, passion fruit and apricot. The mousse is fine and elegant, more creamy than bubbly; silky smooth, but with a ton of fresh acidity hidden behind the generous palate. This is serious bubbly for its modest price point! The perfect way to start a dinner party, or a wonderful wine to enjoy curled up on the couch with popcorn and a movie.
