Tortilla Chips with Mint Guacamole
Early Summer 2007
Instead of the usual coriander, try mint with colourful tortilla chips.
Makes about 1 cup (250 mL)
2 ripe avocados
2 tbsp (25 mL) lime juice
1 green onion, thinly sliced
¼ to ½ tsp (1 to 2 mL) salt
¼ tsp (1 mL) ground cumin
2 tbsp (25 mL) chopped fresh mint
1. Peel avocados and remove pit. Mash, leaving some chunkiness. Stir in remaining ingredients until combined.
Makes about 1 cup (250 mL)
