This Martini Club original marries gin with basil and peach for a surprising and herbaceous cocktail. The word basil comes from the Greek word meaning king.
In a cocktail shaker filled with ice, add 3 basil leaves, torn, 1 oz gin, ½ oz Cointreau, ½ oz lime juice, ½ oz simple syrup (see below) and 2 oz peach juice. Shake sharply and strain into a tall glass filled with ice. Add a dash of bitters. Garnish with a peach slice and a basil leaf.
Simple Syrup
3 cups (750 mL) each granulated sugar and water
Combine sugar and water in a saucepan. Set over medium-high heat and cook, stirring until sugar is dissolved, for 6 to 10 minutes or until mixture comes just to a boil and clarifies. Cool to room temperature; transfer to a sterilized jar. Cover tightly and refrigerate for up to 3 weeks.
