Strawberry Sangria Rosita

This is a change from the regular Sangria, lighter and not so alcoholic, perfect for summer sipping.

Makes about 7 cups

2 cups (500 mL) diced fresh strawberries
1 small orange, halved and thinly sliced
1/3 cup (75 mL) brandy
1 tsp (5 mL) freshly squeezed lemon juice
1/2 cup (125 mL) Strawberry Thyme Syrup (recipe follows)
One (750 mL) bottle of Spanish rosado (rosé) wine, chilled

1. In a large pitcher mix the strawberries, orange slices, brandy and lemon juice.

2. Add the syrup and mix. Chill for 2 to 3 hours. Add ice, wine and serve.

Makes about 7 cups


Strawberry Thyme Syrup
1 cup (250 mL) water
1/2 cup (125 mL) granulated sugar
4 sprigs of fresh thyme
2 cups sliced fresh strawberries

1. Bring the water and sugar to a boil, stirring to dissolve the sugar. Boil for 1 minute, then add thyme and berries to the sugar syrup. Remove from the heat, cover and cool to room temperature, then strain, pressing to extract all the syrup.

Makes 1½ cups (375 mL)
