Spinach and Bok Choy Mix
Winter 2005
By combining the 2 greens, you get more texture and a bright green colour. If baby bok choy is unavailable buy regular bok choy and slice it.
Serves 6
½ cup (125 mL) butter
¼ cup (50 mL) sliced garlic
6 cups (1.5 L) baby bok choy, cut in half
6 cups (1.5 L) baby spinach
Salt and freshly ground pepper
1. Heat butter in a wok over medium heat until sizzling. Add garlic and cook until golden, about 2 minutes. Add baby bok choy and sauté for 3 minutes or until limp.
2. Add spinach to wok and toss with bok choy. Cook until just wilted. Season with salt and pepper.
Serves 6
