Russian Iced Tea

The Brits aren’t the only serious tea drinkers; it’s big in Russia too. Brewing the tea extra-strong helps it stand up to the vodka.

Makes 10 to 12 servings

4 cups (1 L) lemonade
8 cups (2 L) strong black tea
3 tbsp (45 mL) honey (buckwheat has a lovely strong flavour that shines in this)
12 oz (375 mL) Stolichnaya vodka
5 or 6 long strips lemon zest, made with a vegetable peeler

1 T he day before, fill 2 ice cube trays with the lemonade and freeze.

2 Also the day before, or at least a few hours before, brew 8 cups of very strong black tea.While the tea is still hot, add the honey and stir until completely dissolved. Let cool on the counter, then refrigerate to chill.

3 Into a pitcher, combine the cold tea, vodka and lemon strips.

4 To serve, put 3 to 4 lemonade ice cubes into tall glasses and top up with the vodka-spiked tea.
