Rum Simple Syrup

With Tiki cocktails taking the spotlight, rum has become increasingly popular. And whether your rum lover is a fan of white rum, spiced rum or aged rum, this tropically inspired syrup is a perfect accompaniment. The flavour is unique and exciting, with toasted coconut taking the front of the palate, followed by the lime zest, which is tart with added floral notes coming from the skin of the fruit. The syrup can be deliciously playful—simply shaken with pineapple juice—or more sophisticated and inspired when mixed into a Daiquiri, Mai Tai or other classic cocktail. We even created a wonderful dark rum milkshake. This is a great gift for your aspiring home bartender, because with this gift the possibilities are endless!
Makes approx. 8 cocktails using 1 oz of syrup
To a heatproof jar, add 4 tsp (20 mL) toasted coconut, the zest of 2 whole limes, ½ cup (125 mL) sugar and ½ cup (125 mL) boiling water. Stir to dissolve the sugar and allow to cool. Put in a lidded jar and store in the fridge for 4 to 24 hours. Strain out liquid into a decorative bottle for gifting, discarding the solids.
