Rosemary Meyer Lemon Spritzer

The Meyer lemon is a fruit native to China. Its flavour is a cross between a lemon and a mandarin orange. You can substitute equal parts of a lemon and mandarin orange if Meyers are not available.

Serves 8

1 bunch fresh rosemary
1/2 cup (125 mL) Meyer lemon juice
1/2. cup (125 mL) rosemary- and Meyer-lemoninfused simple syrup (see TIP)
1 1/2 cups (375 mL) vodka
Soda
Rosemary sprigs for garnishing

1 In a pitcher, add rosemary, Meyer lemon juice and infused simple syrup. Using a muddler or the back of a spoon, muddle ingredients. Pour into cocktail shaker filled with ice, add vodka, shake and strain into glass and top with soda. Garnish with rosemary sprig.

TIP To make rosemary-and Meyer-lemon infused simple syrup, bring 2 cups (500 mL) sugar, 2 cups (500 mL) water, 1 bunch rosemary and juice and rind of 8 Meyer lemons to a boil in saucepan and boil for 2 to 3 minutes until sugar is dissolved. Strain, cool and store in the refrigerator for up to 2 weeks.
