Sparkling wine tops off this delicious peach and orange ode to summer sun and the juicy delight of ripe picked fruit. If you can't find fresh peaches, the canned variety can be used.

11 oz orange juice
3 oz peach schnapps
1/2 peach, fresh, peeled and sliced
2 oz sparkling wine
Peach or orange slice

1. To a pitcher, add orange juice and peach schnapps. Stir to mix. Pour into a 14-cube ice cube tray (approximately ¾ oz to 1oz per cube). Freeze for at least 2 hours, or overnight.

2. To a blender, add fresh peach, peeled and sliced, and 5 cubes. Blend until slushy (about 10 seconds).

3. Pour into a Martini glass and top with sparkling wine. Garnish with a fresh peach or orange slice, if desired.
