Rum has come a long way since the 17th century, when its nickname was kill-devil. Today this mellow spirit has morphed into an amazing range of colours and styles.

1. In a highball glass add 6 mint leaves, the juice ¼ of  fresh lime and 1 tsp sugar. Muddle or mash with the back of a spoon until sugar has dissolved.

2. Fill the glass with ice and add 1½ oz Bacardi O. Top with sparkling water and stir to mix.

3. Garnish with an orange wheel and a mint sprig, if desired.
