Minted Bourbon

Mint extract comes from both the flowers and leaves. There are more than 30 species of mint, all of varying intensity, peppermint being the strongest. When buying extracts and flower water read the label carefully to make sure that it is the real thing. Simple Syrup should be made ahead and can be kept for up to a month in the refrigerator.
Makes 1 cocktail
1½ oz bourbon
¼ tsp mint extract
2 large mint sprigs
1 oz Simple Syrup (recipe follows)
2 tsp freshly squeezed lemon juice
Sparkling water
1. Place all the ingredients except sparkling water in a cocktail shaker and add ice. Shake and strain into a glass filled with crushed ice, then top with sparkling water and garnish with mint leaves.
Makes 1 cocktail
Simple Syrup
1 cup (250 mL) water
½ cup (125 mL) sugar
1. Bring water and sugar to a boil in saucepan over medium heat, stirring constantly to dissolve the sugar. When the liquid begins to boil, stop stirring, and boil 1 minute. Remove pan from heat and allow to cool. Store in a glass jar refrigerated for up to 1 month.
