Iced Green Tea Collins

The simplicity of the Tom Collins makes it a great base to build on, and our take plays with chilled tea for a thoroughly modern, crisp and perfectly balanced sipper.
Makes about 8 drinks
1½ cups gin,
1 cup lemon juice,
1 cup simple syrup(recipe follows)
1 cup green tea
2 cups sparkling elderflower water
1. To a pitcher, add 1½ cups gin, 1 cup lemon juice, 1 cup simple syrup* and 1 cup green tea. Stir to mix, and store in refrigerator, covered if desired.
2. Just prior to serving, add 2 cups sparkling elderflower water. To serve, pour into highball glasses with ice. Garnish each with a lemon wheel.
Makes about 8 drinks
Simple syrup: Combine equal parts boiling water and sugar, and stir until sugar is dissolved. Store in refrigerator until chilled.
