On a hot afternoon or to finish off a night of barbecuing, our version of a specialty coffee is always a crowd-pleaser! We marry coffee liqueur, vanilla vodka, chilled espresso and vanilla ice cream for a delicious dessert in a glass.

Makes 1 drink

To a tall glass filled with ice, add 1 oz Kahlúa, ½ oz vanilla vodka and 4 oz chilled strong coffee or espresso. Stir to mix. Add 1 large scoop of vanilla ice cream and decorate with chocolate sauce, if desired. Garnish with a mint sprig.

The blackcurrant compote can be prepared in advance—blueberries or blackberries can be used if blackcurrants are unavailable. Using a scoop of blackcurrant sorbet with two scoops of vanilla ice cream adds an extra dimension to the recipe. Shop-bought meringues are perfectly acceptable (no one wants to be baking meringues on a hot summer afternoon). Stiffly whipped cream is the final indulgence.

For a light and refreshing alternative to lemon meringue pie, all the components for this dessert can be made and partially assembled before serving time. Scoops of sherbet can be formed and held in the freezer; the shortbread cookies and lemon curd can both be made days ahead. Even the meringue can be prepared in advance and re-whipped just before serving. All that’s left to do is the last-minute browning of the meringue. If you don’t have an ice cream machine for the lemon sherbet, a good, store-bought lemon ice cream or sorbet would be just as tasty.
