Grilled Cheese on Rye

The classic grilled cheese gets a twist with Gouda and rye. A little tip if your butter is cold from the refrigerator is to melt the knob of butter in the pan and then place the sandwich on top. This prevents tearing the bread with cold butter.
Serves 4
¼ cup (50 mL) butter, softened
8 slices rye bread
12 slices Gouda or Edam cheese
1. Butter 1 side of 4 slices rye bread and top the other side with 3 slices of cheese.
2. Top cheese with second slice of rye to make a sandwich, butter the second piece of bread on the outside.
3. In a large sauté pan over medium heat, cook the sandwiches on 1 side until golden, about 5 minutes. Flip sandwiches and cook on second side until golden and cheese has melted. Serve warm.
