Frozen Citrus Slice

A muffin tray makes a great form to display the beautiful cross-section of citrus slices. Small lemons are needed for this recipe. Petiteo ranges such as clementines or mandarins would work well here too.
Serve with Campari or Sangria
2 small lemons
2 limes
2 cups (500 mL) purified water
1 Slice the ends off the lemons and limes.Starting from the narrow ends, cut citrus into ¼-inch (5-mm) slices, yielding 12 slices small enough to lay flat in a muffin tin.
2 Place 1 citrus slice in each cup of a 12-cup muffin tin. Bring 2 cups (500 mL) purified water to a boil. Pour enough water into each cup to lift the citrus from the bottom of the tray, 2 to 3 tbsp (30 to 45 mL). Freeze for 2 hours, or until solid.
3 Top with enough water to cover the slices, 2 to 3 more tbsp (30 to 45 mL). Refreeze until frozen.
Serve with Campari or Sangria
