Fresh Raspberry Gin Shrub

A shrub is a fruit-flavoured drinking vinegar—one which you keep in the fridge, allowing the bite of the vinegar to mellow over time. To speed things up, this shrub uses just enough vinegar to give the raspberries the perfect level of bright acidity, so you can make the cocktail from start to finish in a day!

Makes 6 cocktails

RASPBERRY SHRUB SYRUP
2 cups (500 mL) raspberries
1 cup (250 mL) sugar
3 tbsp (45 mL) raspberry red wine vinegar

COCKTAIL
1½ cups (375 mL) gin
¾ cup (175 mL) raspberry shrub syrup
1 cup plus 2 tbsp (280 mL) club soda

GARNISH
6 sprigs basil and raspberries

1 Mash berries with sugar and let stand at room temperature for 90 minutes.

2 Strain through a sieve into a bowl, pressing down on solids to extract all juice. Stir in vinegar. Makes ¾ cup (175 mL) shrub syrup.

3 Combine gin and raspberry shrub syrup in a pitcher. For each drink measure out ⅓ cup (80 mL) of mixture and shake over ice. Strain into an ice-filled glass and top with 3 tbsp (45 mL) soda water. Garnish with basil sprigs and raspberries.
