Cilantro Mojito
Spring 2017
Inspired by the classic Cuban Mojito, we added cilantro for a twist. This herbaceous cocktail pairs well with our Cuban Chicken & Rice and highlights its citrus flavours. It creates a refreshing balance, cutting the richness of the dish with its acidity. If you’re feeling adventurous, try some flavoured sodas such as blood orange or limonata.
Makes 1 drink
¼ cup (60 mL) fresh cilantro with stems, plus extra for garnish
1 tbsp (15 mL) mint leaves
2 tsp (10 mL) white sugar
1½ oz white rum
2 tsp (10 mL) lime juice
Ice
Soda water as needed
1. Muddle cilantro, mint and sugar in a bowl with a wooden spoon until herbs are bruised. The herbs should release their juices and the sugar will dissolve.
2. In a tall glass, mix herb mixture with rum and lime juice. Fill with ice and top with soda water. Garnish with more cilantro
