Chanterelle Martini
Spring 2006
A dashingly woodsy cocktail that calls for very fresh, well cleaned chanterelles. *To prepare the garnish, soak whole baby chanterelles in equal parts vodka and apricot brandy for a couple of hours.
Makes 14 cocktails
25 oz vodka
1 oz green Chartreuse
1 oz Pernod
1 oz apricot brandy
2 cups coarsely chopped chanterelles
2 sprigs fresh rosemary
1 frond fresh fennel leaves
1. Combine all ingredients in a glass container and refrigerate for 2 to 3 days.
2. Strain 2 oz of the infusion into a cocktail shaker half filled with ice. Shake and strain into a Martini glass.
3. *Garnish with a prepared baby chanterelle (see above).
