Canadian Whisky Simple Syrup

We’ve created a flavour that reminds us of a warm sweater, a roaring fire and cozy wool socks on a blustery, snowy night. Our Canadian whisky simple syrup is as comforting as apple pie. It’s a perfect gift for your whisky-loving loved one, because of the great flavour and diversity of the syrup. It can be used to create a Hot Toddy, act as the base for a Whisky and Apple Cider, or even be used in a Whisky Sour for a festive twist. We also used the syrup when we made a batch of baked apples with granola, with amazing results. Bottle some syrup up for your friends, but save a batch for yourself!
Makes approx. 8 cocktails using 1 oz of syrup
Peel 2 Granny Smith apples with a potato peeler. Add peel to a heatproof jar, along with 4 sticks of cinnamon bark, ½ cup (125 mL) brown sugar and ½ cup (125 mL) boiling water. Stir to dissolve the sugar and allow to cool. Add 1 tsp (5 mL) vanilla extract. Put in a lidded jar and store in the fridge for 4 to 24 hours. Strain out liquid into a decorative bottle for gifting, discarding the solids.
