Blueberry-Mint Swirl Smoothie

Waking up to a refreshing smoothie is theperfect way to start a cottage day. This parfaitstyle version of a classic smoothie is deliciousserved with homemade granola.

1 pkg (300 g) frozen blueberries
½ cup (125 mL) freshly squeezedorange juice
3 tbsp (45 mL) honey
¼ cup (60 mL) lightly packedfresh mint leaves plus more mintfor garnishing
4½ cups (1.125 L) Greek-style yogurt

1 In a blender, pulse blueberries with orangejuice, honey and fresh mint. Add ½ cup (125 mL)yogurt. Pulse, scraping down sides occasionallyuntil mixed and roughly puréed.

2 Spoon about ¼ cup (60 mL) yogurt into acup, top with blueberry mixture and repeatwith 1 more layer of yogurt and blueberrymixture. Garnish with fresh sprigs of mint.Repeat with remaining ingredients. Serve immediatelywith a spoon.
