Blood Orange Sparkler

This is a version of a traditional Mimosa. The blood orange is a hybrid of ancient origin between a pomelo and a tangerine and is grown in Sicily.

2 oz blood orange juice (freshly squeezed)
4 oz Prosecco or sparkling wine

1. Into a Champagne flute, pour blood orange juice and top up with Prosecco.
