Big-Batch Moscow Mule with Watermelon and Lime

Makes 6 to 8 cocktails
8 oz vodka
4 oz freshly squeezed lime juice
3 cups (750 mL) ginger beer
7 to 8 small watermelon wedges, for garnish
Pour vodka and lime juice into a pitcher. Add 2 cups (500 mL) ice. Top with ginger beer and add a watermelon wedge. Stir to evenly mix. Pour into ice-filled glasses. Garnish cocktails with remaining watermelon.
