This long, cool cocktail is a great place to begin an introduction to bitter cocktails. Aperol is often cited as Campari-lite, and indeed it’s less bitter and has less alcohol than its cousin. It pairs beautifully with gin and blood-orange soda in this seasonal refresher. If you’re already a fan of bitter cocktails, try it with Campari.

In a cocktail shaker filled with ice, combine 1 oz Aperol, 1 oz gin, 1 oz fresh blood-orange juice and ½ oz lemon juice. Shake and strain into a tall glass filled with ice and top with blood-orange soda. Garnish with a blood-orange slice.
