Roasted Baby Potatoes with Anchovy Butter

This recipe makes a good side dish for grilled fish.

2 lb (1 kg) small red potatoes
2 tbsp (25 mL) olive oil
2 tsp (10 mL) chopped garlic
Salt and freshly ground pepper
6 rosemary sprigs

Butter
¼ cup (50 mL) unsalted butter
2 anchovies, finely chopped
½ tsp (2 mL) chopped garlic
2 tbsp (25 mL) chopped parsley
Salt and freshly ground pepper

1. Preheat oven to 400ºF (200ºC).

2. Wash potatoes, but do not peel. Combine oil and garlic and toss with potatoes. Season well with salt and pepper.

3. Place potatoes in metal baking dish. Strew with rosemary. Bake, tossing occasionally, for 35 minutes or until tender.

4. While potatoes are baking, make butter. Cream butter, anchovies, garlic and parsley together in a mini chop or by hand. Season with salt and pepper.

5. Place potatoes in serving dish and toss with butter. Serve warm.

Serves 4 to 6
