Rhubarb Compote

Clean and chop three stalks of rhubarb and place in a pot with about ½ cup of water. Add 2 to 3 tbsp sugar (to taste). Cover and bring to a boil. Reduce heat, cook on low for 5 minutes, until rhubarb is soft. Stir and sweeten to taste if needed. Let cool, cover and refrigerate.

Makes about 2 cups
