Cucumber Raita

Raita is a cooling dish served with hot food to take the edge off the heat. It is always a combination of yogurt and other ingredients.

1 tbsp (15 mL) cumin seeds
1 cup (250 mL) yogurt
1 cup (250 mL) grated cucumber
Salt and freshly ground pepper
Mint sprigs

1. Heat cumin seeds in dry skillet over medium heat until fragrant. Stir into yogurt along with cucumber, salt and pepper. Top with mint sprigs.

Makes 2 cups (500 mL)

What to Serve
