Hearty Sweet Potato, Ham and Bean Soup

Transforming leftovers into a great soup not only cleans out the fridge but leaves you with a delicious soup you’ll make time and time again.

1 tbsp (15 mL) olive oil
1 each carrot and celery stalk, diced
1 onion, diced
2 garlic cloves, minced
Generous pinches salt and pepper
1 carton chicken broth, 900 mL
1 can diced tomatoes, 796 mL
1½ cups (375 mL) leftover mashed sweet potatoes or squash
1 can black beans, 540 mL, rinsed and drained
1 cup (250 mL) diced leftover baked ham (optional)
1 tbsp (15 mL) dried oregano leaves
2 tsp (10 mL) ground cumin
2 bay leaves
1 tsp (5 mL) hot pepper sauce
½ cup (125 mL) chopped coriander

1. Heat oil in a large wide sauce pan over medium heat. Add carrot, celery, onion, garlic, salt and pepper. Stir occasionally until vegetables are tender, 5 minutes.

2. Stir in broth, tomatoes, sweet potato, beans, ham, oregano, cumin, bay leaves and hot pepper sauce. Simmer, covered, 15 minutes to blend flavours. Stir in coriander and salt if needed.

Makes about 12 cups (3 L)
