Cherry Tomato Salad

Delicious piled onto your sandwich or served alongside.
2 cups (500 mL) cherry tomatoes
2 tbsp (25 mL) balsamic vinegar
¼ cup (50 mL) olive oil
Salt and freshly ground pepper
2 tbsp (25 mL) slivered basil
1. Slice tomatoes in half. Place in a bowl and toss with vinegar and olive oil. Season with salt and pepper. Leave to marinate for 4 hours before serving.
2. Garnish with basil when ready to serve.
Serves 10
