Maturation is completed in French oak barriques and tonneaux for a period that may vary from 42 to 50 months. Then the wine is aged in bottle for a year. Made with organically farmed grapes it has aromas of iris, spiced plum and a whiff of mocha. The structured palate offers blackberry jam, espresso and star anise alongside fine-grained tannins.
