The idea and dream to produce a Languedoc craft gin has been with them for several years. The 'garrigue', the wild scrubland of the Languedoc is full of enticing aromas from its wild herbs - rosemary, thyme, fennel, mint and rocket. They wanted to capture these aromas in their gin. The base spirit is distilled from some of their Faugéres red wine. It was distilled twice before the botanicals were added, followed by a third and final distillation. They used wild thyme, mint and juniper along with peppercorns and lemon peel that add to the intrigue of this gin. This artisanal gin represents the essence of the Mediterranean. Very fresh and peppery, easy to drink neat or on the rocks.
