Ontario winemakers are showing increasing interest in Pinot Gris, one of the noble grapes of Alsace. Fielding is particularly adept with it, producing wines of considerable structure that express a great depth of fruit character. This one will be juicy and floral with honeydew melon, orchard fruit, citrus and spice. It has the freshness and zesty acidity to be enjoyed on its own but would be particularly great with a creamy seafood pasta.
